I have a 2000 328i. The past 2 morning I started my car before leaving and let it warm up. When I went out to get in and leave the car was off. I restarted it as the temperature gauge went all the way to hot. I shut it down again and restarted it and no issues. Anyone have any idea what would cause this?

Sounds like air in the system or perhaps a faulty temperature sensor.

Since the symptoms existed before you added coolant, I'd say it wasnt because of air in the system. Air doesnt magically appear in the cooling system. (If there was a crack etc, it would have gushed out coolant, not sucked in air - the cooling system is a pressured unit)
