I currently have the stock 205/55 R16's on my 325Ci, If i get 2xx/45 R17's, will that keep the proper wheel diameter so it won't affect speedo readings and odometer?

yea most ppl go with 225/45/17

Right. 225/45R17 will maintain the same overall diameter so no changes would be needed.
