Yeah, take 20mm off the tire width...

That's just wrong. Oh, it may fit, but choosing to stick on a narrower tire is just wrong.

Being a multi-piece wheel, you could get the right barrels for an offset that will actually fit.
 
Not trying to be an @$$, but see, I'd debate that it fits. If it fits with excessive camber, I'd say it doesn't fit. Ditto with putting on narrower tires. That's just something I WON'T do.

I agree with you about the deeper dish. I like a deeper dish for sure. I'd love to fit a set of genuine M Par wheels (also available in 18x8 ET20), but the same issues apply.
 
I've often wondered if the mounting face of some of these wheels could be milled. The two main issues to consider is whether there would still be brake clearance for the spokes and whether there would still be enough meat in the mounting/thread holes to properly hold the wheel on (although this could also be resolved with welding up some aluminum in the bolt holes and remachining the seats. Basically, we're talking about changing the offset of the wheels.

That said, people DO mount these wheels. Before deciding yay or nay, I'd find out who has done it and have a discussion with them on how they solved the issues. THEN you can decide if it's worth it to you.
