It's a sedan, no fold down seats, no ski pass, but I do have the arm rest.

I can get the bottom out, and the sides of the rear seat but I can NOT get the center part to budge, nor the center head rest, it's all on there tight.

I can't find any torx heads.

I have read a couple of DIY's here but if someone knows how to do this please let me know, as I am getting pretty frustrated, thanks.

Why do you want to do that? Just asking
Get to rear deck, possibly remove center seat belt, remove inside C pillar panels so they can be recovered (the fabric is gone, it delaminated badly during tint install)...perhaps some day install full cage.

Ok, the key was to remove the center headrest first. I have now completely deleted the center belt & headrest.

Now I am wondering if there is a good source for fabric? I am thinking either grey to match or perhaps black.
