Do you guys dry with a chamois or towels? I have always used a real chamois (not synthetic) but it looks like I'm getting the swirls on the paint from it. I use a microfiber wash mitt so I don't think it is from that. What do you guys suggest? And if you do use a chamois how do you know when you should replace it? After a certain amount of washes?

Swirls are not from your chamois. It's from your wash mit. Clean it really good before starting and in between soaping. You don't dry the car in a swirl pattern, you do it in a straight line pulling the chamois around.
Swirls are not that bad, just get a polish and spend an hr or 2 on it then finish with a wax,

Chamois can leave mar marks, and remove wax from your car. A waffle-weave microfiber towel does a great job drying. You can also use a leaf blower to get water from nooks & crannies (not my advice). Save the chamois for the windows.

I use microfiber towels to wipe. It's been pretty effective.
