My Ride: 2001 TiAg 330i
Weight difference going from 17" tires to 18" tires

What is the average difference in the weight of the tire (rubber) when upsizing from a 17" to 18" tire with the same width give or take 0.5"?

Basically I am interested in whether it is possible to have your cake and eat it too. Can I go from a 17" wheel (rim) that is heavier than an 18" by about 5 pounds, yet still come out with a lighter 18" wheel+tire combo compared with the 17" wheel+tire combo.

Correct. Its just not a major factor since a tires grip levels and handling will make much, MUCH more difference than a few lbs of weight.
